The orange colored crunchy powerfood and amazing vegetable is most flavorful and freshest during the summer and fall. But carrots are not always orange; there are many colors of carrots. The other color varieties of carrots are white, yellow, red and purple.

Carrots are related to parsley, cummin and fennel to name a few. This crop can grow in length up to three feet and can be as small as two inches. The carrot root has a sweet and minty aromatic taste and with a crunchy texture. Carotenoid in carrots can be fully availed after cooking carrots in oil or juicing them.

Carrots contain a considerable amount of beta-carotene which is transformed into vitamin A by the liver and converted in the retina to rhodopsin, a purple pigment used in night vision.

The high levels of beta-carotene in carrots serve as antioxidants against cell damage  occurring in the body through regular metabolism, eventually slowing down the aging of cells.

Antioxidants and vitamin A also protect the skin from damage caused by sunlight. The significant amount of vitamin A produced prevents dryness in skin, nails and hair while preventing wrinkling, acne, blemishes, uneven skin tone and pigmentation.

Faclarinol is said to be a natural pesticide and only few vegetables contain this compound.
  • Lowers risk of heart diseases. Carrots prevent heart disease and stroke. Aside from beta-carotene, carrots also contain alpha-carotene and lutein which reduce the risk of heart diseases. Eating carrots regularly can also lower cholesterol level due to the soluble fibers in carrots which combine with bile acids. Persons who eat more than six carrots a week are said to have significantly reduced possibility of suffering from stroke than those who ate only one carrot a month.
  • Detoxifies the body. The vitamin A content of carrots cleanses the body and help the liver in removing toxins in the body while reducing fat and bile in the liver. Carrot fibers also help in cleaning the colon and improving bowel movement.
